Feb 7th ,2010 ,ButterCream Icing

I learnt it from 1 of my hotelier friend ,Sandhya. I baked few Vanilla cup cakes and decorated it with butter cream icing. I never knew its so easy to do.so i thought that there will be lot of people who know how to bake but then have hard time making perfect icing. So here it is.

Dish:Butter Cream Icing Time:15 mins Costing:

Ingridients:

Unsalted Butter(white butter):250 gms
Meringue powder:2 Spoons(optional it can be substituted by egg whites)
Icing sugar:2 spoons
Food colour:Red
Vanilla essence:1 spoon
Milk:50 ml

In the bowl of your electric mixer, or with a hand mixer, cream the butter until smooth and well blended. Beat in the vanilla extract. With the mixer on low speed, gradually beat in the sugar. Scrape down the sides of the bowl as needed. Add the milk and beat to combine. Then, on high speed, beat frosting until it is light and fluffy (about 5 minutes).

This frosting can be stored in the refrigerator for up to 10 days. Bring to room temperature and re-whip before using. Add a little milk or sugar if needed to get the right consistency.

Tint portions of frosting with desired food color . I used red color .

And you can use this icing on cake as borders or filling it up.

1 Carrot(Shredded)
small pc of Ginger(shredded)
1 Spoon of butter
6 Spoons of Oil (for deep frying)

Process

For making Hung curd: Lay a muslin cloth over a bowl and pour the yogurt's into it. Pick up the edges of the cloth and tie a knot. Hang it till it turns into a cheesy mixture. U may keep it for 4-5 hrs till the entire water comes out.

Jan 14th 2010 Tandoori Roti (not in tandoor):)

Hey guys

I am back again with a new recipe . How many of you want to make Tandoori Rotis at home and couldn't make because u don't have Tandoor. I learnt it from one of the House maid called Meera. It was unbelievable but then i made it .Okay the most important thing is that the entire arrangement for learning this roti making happened at my friends place .Thanks Anju for the support.

So Now lets start making it .

Dish:Tandoori Roti Serves:any Number you want to Costing:

Ingredients:

Wheat flour
Little Salt(If u add salt in your flour)
Ghee

Process

Make a dough. Now prepare the balls from the soft dough. And then roll the balls to give it a roti shape. Once you have rolled the roti then apply the ghee on it .Fold like you are making a paper fan and then roll into circle. Now press it lightly towards the center to show the layers clearly and roll like a roti.
Note:the size of the roti has to be small and little thick. Mean while heat the pressure cooker well without the lid(select an open mouth ).Apply water on one side of roti and then carefully place the roti on the side of the cooker so that the wet side of the roti is in contact with the cooker. After 2-3 mins invert the cooker on the flame so that the top of roti gets cooked with the direct flame.Take our roti from the cooker and show it directly on the flames till it is crispy(which will not take more then 5 secs)

Your Tandoori roti is ready .Apply little ghee and u can have with dal ,chicken whatever u may feel like.

So guys try ,I am sure you can make it ,in case of any queries do let me know That's for the day .Well I am making rajma tomorrow , surely different from what you have been making till now of course contributed by Pooja.

Put 1 bowl of sugar..Mix it well till it becomes fluffy and light.
Put in Oil in it ..U might use Butter but then i used Oil...Beat it well for 10 mins ..it should be mixed well and should be light in consistency.
so u all ready with 1st part of Batter..

2nd level:
Mix flour with Baking powder , Baking Soda ,Cinnamon Powder and then start putting it in 1st batter(Egg batter)slowly n slowly.
CAUTION :Dnt put the entire flour mixture in one go otherwise it may form Lumps. As u r putting flour keep mixing it with the batter continuously. The batter's consistency has to be thick ..the more u stir and mix it the cake will be fluffier and tasty. U might use hand mixer here otherwise u can just use wooden spatula for mixing it. So finally the batter is ready.

Now fold in 1.5 Bowl of grated carrot and coarsely cut nuts in it. Mix it well. Grease the pan and use Butter paper to avoid sticking of cake at the bottom.
Put the Batter in the Grease pan and check the level..it has to be filled 3/4 of the pan.
Preheat Oven at 180*C and bake it at Convection Mode for 45 Mins.
Check cake by pricking toothpick in the middle of the cake. If the batter is not ready it will stick on toothpick. May use Conv+Micro mode now and cook it for 5 mins and c ur cake is all done.
Leave it for 10 mins on rack and then take it out.

For topping it up:
Use 2 regular spoon of cream and 1/2 bowl of icing sugar or powdered sugar which can be made at home by grinding granulated sugar .The consistency should be thick ,add in 3 tsp of butter in it and then glaze it over cake . Decorate with silver balls ...Oh La La! Cake looks yum and it tastes yum...its a Moist cake....
