Feb 14th , Taking break.

Hey friends

From last few days i have not written my blog.Well i thought i will be writing lot of recipes here in pune but unfortunately i am not keeping well. I am busy nursing myself from last 1 week to get rid of this cold n cough. Its been bad and i am hoping everyday to be well soon. I am taking a break from the blog till i get well soon and load my blog with lots of recipes. C ya soon .

Feb 7th ,2010 ,ButterCream Icing

I learnt it from 1 of my hotelier friend ,Sandhya. I baked few Vanilla cup cakes and decorated it with butter cream icing. I never knew its so easy to do.so i thought that there will be lot of people who know how to bake but then have hard time making perfect icing.So here it is.

Dish:Butter Cream Icing Time:15 mins Costing:

Ingridients:

Unsalted Butter(white butter):250 gms
Meringue powder:2 Spoons(optional it can be substituted by egg whites)
Icing sugar:2 spoons
Food colour:Red
Vanilla essence:1 spoon
Milk:50 ml

In the bowl of your electric mixer, or with a hand mixer, cream the butter until smooth and well blended. Beat in the vanilla extract. With the mixer on low speed, gradually beat in the sugar. Scrape down the sides of the bowl as needed. Add the milk and beat to combine. Then, on high speed, beat frosting until it is light and fluffy (about 5 minutes).

This frosting can be stored in the refrigerator for up to 10 days. Bring to room temperature and re-whip before using. Add a little milk or sugar if needed to get the right consistency.

Tint portions of frosting with desired food color . I used red color .

And you can use this icing on cake as borders or filling it up.

Feb 6th, Dahi wala Bhindi(Okra)

I told you in my last blog that i love Bhindi and thats the reason i am going to write all kind of bhindi's recipe which are super yum. This one is taken from NDTV Show and has come out nicely.

Dish:Dahi wala Bhindi Time:1/2 an hour Serves:4 people Costing:

Process:

Ingridients:

Bhindi:500 gms(cut into medium pcs)
Curd:250 gms
Tomatoes:2(Pureed)
Onion:1(make a paste)
Ginger and Garlic:2 spoons(paste)
Garam masala:1 spoon
Turmeric powder:1 spoon
Red chilly powder:1 spoon
Coriander Powder:1 spoon
Oil to fry


Shallow fry Bhindi.Keep aside.Mix all the masalas in curd. In a differnet kadhai put 2 spoons of oil and fry onion till it turns golden brown. Put ginger and garlic paste and fry for 5 mins . Add tomotoes ,fry till the oil spaerates. Put the Curd (mixed with all masalas) and fry for 10 mins. Add little water and let it boil . Add bhindi ,put salt and let it simmer for 5-7 mins on low flame. Goes well with rice.

Here i bring you one of the best dish from Kolkata. In Bengal its called as "Macher jhol" .My mom made it and it was so delicious that we three ,me ,my mom and my maid finished it and cooked dal for Bro and papa. So all fish lovers must try recipe for you.

Dish:Sarson Fish Serves:3 Time:30 Mins Costing

Process:

Ingredients:

Rohu (one of the varieties of fish) Fish:1 Kilo
Yellow sarson(Mustard):3 Spoons
Ginger and Garlic:20 gms
Onion:2 (Cut into small pcs)
Lemon :1
Turmeric powder:2 Spoons
Red Chilly Powder:2 Spoons
Coriander Powder:1 spoon
Tomatoes:4 (cut into small pcs)
Sarson ka Oil:5-6 spoons
Kala Sarson(Mustard):1 Spoon
Salt to taste

Wash and clean the fish. Rub lemon on it. Marinade fish in turmeric powder and red chilly powder. Leave it for 1/2 an hour.Soak yellow sarson and ginger,garlic in water for 1 hr. Make the paste . Put oil in frying pan and deep fry the fish. In another pan put 2 spoons of sarson oil and put the black sarson. Put cut onions and fry till it turns golden brown. Add the mustard paste in it and fry till the oil separates. Add a spoon of turmeric,red chilly and coriander and fry for 2 mins.Add tomatoes and keep frying it on low flame till the oil separates. Add water and let it boil . Add fried fish and simmer it on low flame for 8 mins. Serve it with boiled rice.


Oh gosh i have eaten so much today...i have to go on diet for 2 days to make it up:)

Feb 4th ,2010 , Bhindi Masala Fry

Hi

Its been 4 days that i haven't written anything on blog. Well I was too busy finishing my office work . But then i kept trying recipes everyday and i am going to write all of them today.

So lets start with Bhindi Fry .This can be served with paranthas and is just yum .

Process:

Ingredients:

Bhindi:(Okra) 500 gms
Ginger:1 spoon(cut into very tiny PCs)
Fresh coriander:cut into small pcs
Red Chilly Powder:1 Spoon
Turmeric Powder:1 Spoon
Coriander Powder:1/2 spoon
Sabut Jeera:1 Spoon
Besan:1/2 Katori
Cornflour:2 Spoons
Salt to taste
Oil to fry:can use sarson ka oil
Roasted Papad:2

Mix Bhindi(Okra) with all the ingredients except papad. Heat a kadhai on and pour oil for deep frying. And deep fry the Bhindi. Not necessary that you have to put the entire bhindi in one go. Divide the portion into 4 and fry. Garnish with papad.Relish the kurkuri bhindi and is very tasty. Its really goes well in dinner parties.

Feb 3rd,2010,Jhatpat Pav Bhaji

I had done lot of shopping today for making a cake. I will bake it tomorrow. In pune you get all kind of baking stuff,its difficult to find it in Gurgaon.I will be also trying Thai dishes soon.Trying to poach in with one of my friend to learn it and make it :).

Today i made this Mumbai PavBhaji and it came out very very tasty. I always thought making pav bhaji is long process but then the neighbour in Pune taught me quick way to make it. Now you can just call all your friends at home for Pav Bhaji treat.

Process:

Dish: Jhatpat Pav Bhaji Time:30 mins Serve:4 People Costing:

Ingridients:

Onions:3(Chopped)
Garlic:1 spoon paste
Potatoes:6 (peeled)
Tomatoes:7(Pureed)
Cauliflower:1
Capsicum:1
Peas:250 gms.
Kashmiri Mirch:1 tsp
Red chilly powder:1 Tsp
Coriander PowderL:1 Tsp
Kasoori Methi:1 Tsp
Turmeric Powder:1/2 spoon
Pav Bhaji Masala:2 spoons
Salt to taste:2 tsp
Butter:3 Spoons
Oil :2 Spoons
Pav-(square white bread available in market)2 Packets

Peel the pototoes and cut cauliflower in medium pcs. Pressure cook pototatoes ,cauliflower,peas and capsicum. Wait for 4-5 whistles and then turn off the gas.Strain the vegs and keep the water aside. Will use the same water to make little gravy . Put a frying pan on the flame ,add 2 spoons of oil ,add chopped onion,garlic paste and fry till they turn golden brwon. all add masalas and kastoori methi and fry for 10 more mins. Add 1 spoon of butter now in it. Put pureed tomotoes and fry for 5 mins on high flame.Add Pav Bhaji Masala in it. Mash the boil vegetables and put it in the pan. Mix it well .Add salt and fry it on high flame for 5 mins. Add water in it and let it simeer for 10-12 mins . Make sure the consistency of bhaji is always thick so dont pour lot of water in it. Cover the pan and lower the flame . After 15 mins turn the gas off and ganish it with coriander leaves, onions and lemon wedges.

For Pav:

Slice each pav into 2 horizontally. Apply a little butter to each side .Heat a large tava and cook the pav on both sides till the pieces are lightly browned.

Easy to make and is very filling. so if you dnt want to do an elaborate dinner ,make this recipe and enjoi ur evening.

I was thinking of skipping dinner today but after seeing pav bhaji ,looks impossible now. Lemme just go n have it otherwise my bro will have all:)

feb 2nd,2010 Pahari Aloo Achar

Since morning i was thinking what shall i put in my blog today and was chatting with one of my dear friend, Shivani. She told me about this amazing recipe. This is made by Nepalis and is served with Puris or Paranthas. Quite an amazing dish. I tried it and my mom has already eaten 2 bowls of it.

Lemme write this right away so that you can try it asap.

Dish:Pahari Aloo(Potatoes)Aachar (pickle) Serves:4 people Time:30 Mins Costing:

Process:

Ingredients:

Medium Sized Potatoes: 8-9 pcs
White Til(Sesame): Approximately 3 spoons.
Degi Mirch:2 Spoon
Dhaniya Powder:1 spoon
Methi Dane(fenugreek):7-8 pcs
Salt:2 tsps
Sarson Oil:2 Spoons
Tamarind:20 gms

Wash potatoes and pressure cook it. Meanwhile put tamarind into 200ml of water and boil it .Strain it and keep aside. Roast the sesame seeds and grind it adding a 1/2 tsp of salt in it. Peel boiled potatoes and cut into small pcs. Take a mixing bowl ,mix potato with sesame powder,degi mirch,dhaniya powder and salt. Take a pan ,heat sarson oil in it and put methi dane and let it splutter. add the same oil to the potatoes and cover it with lid for 5- mins so that the oil and fragrance of methi goes deep in potatoes.Finally add Tamarind water make sure the consistency is thick.

Have this with Puris or paranthas. You will definitely relish it .

Feb 1st ,2010 Antioxidant

Its been almost 12 days i am in Pune and my honey is in Gurgaon. Its little unfortunate that i am trying all this recipe and he is not here with me . When he says that its amazing i feel content.Hopefully i will meet him soon :)

I tried this antioxidant drink and it came out good .


Health Drink:Antioxidant Drink Serves:2 People Time:10 mins Costing:


Process:

Ingridients:

Freshly grated apple:2 Spoon
Munakkas: 2pcs
Water:200 ml

Wash munakkas and chop them. Grate apple.Boil water in a pan ,add munakkas . Simmer it for 2-3 mins. Take out the munakkas and keep it in a cup.Add grated red apple to the simmering water and turn off the flame. Cover the pan and let it steep for 5 minutes. Strain it in in the cup containing munakkas.

Hmmmm so all 3 drinks which i have mentioned in the blog is good and must try drinks with lot of benefits.

Hey friends

I saw Veer today and i liked it quite much. Ufff how handsome is Salman Khan:). I hope i get chance to c him in my lifetime:):)
I tried this recipe and this is going to keep u slim forever:)Not joking try it for a month and c the difference.

Health drink: Slim Blend Time:10 mins Serve :2 People Costing:

Process:

Ingredients:

Pepper Corns: 4 pcs
Sultanas(Raisins)-6 pcs
Fresh Thyme or Dried Thyme:2 Twigs /1 Teaspoon
Water:450ml.

Wash and chop fresh thyme leaves. Slice washed Sultanas. Boil water in a pan. Crush the pepper corns to make the coarse powder and add them to water. Simmer it for 2 mins. The add thyme and again simmer it for 2 mins keeping the pan covered. Add sliced sultanas. Simmer till sultanas are soft enough to be mashed .Strain and pour this exotic blend and savour.

Black pepper has antioxidant and antibacterial effects. The outer layer of the peppercorn stimulates the breakdown of fat cells ,keeping you slim.
